An easy, indulgent family favorite featuring baked potatoes filled with a hearty shepherd’s pie mixture.

Ingredients

  • 4 large baked potatoes
  • 1 pound ground beef
  • 1 cup diced carrots
  • 1 cup frozen peas
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1 cup beef broth
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 cup shredded cheddar cheese
  • salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Prepare baked potatoes by washing and piercing the skin, then baking until soft.
  3. In a large skillet, brown the ground beef until fully cooked, then drain excess fat.
  4. Add onions and garlic to the skillet and sauté until softened.
  5. Stir in carrots, peas, tomato paste, beef broth, Worcestershire sauce, and thyme. Simmer for 10 minutes.
  6. Once potatoes are done, slice them open and fluff the insides with a fork.
  7. Spoon the meat mixture into each potato and top with shredded cheddar cheese.
  8. Return to the oven for an additional 10 minutes or until cheese is melted and bubbly.
  9. Serve hot and enjoy!
