A delicious and easy slow cooker chicken burrito bowl recipe that the whole family will love!

Ingredients

  • 2 pounds boneless, skinless chicken breasts
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 jar salsa
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • 2 cups cooked rice
  • 1 cup shredded cheese
  • 1/4 cup chopped fresh cilantro

Instructions

  1. Place chicken breasts in the slow cooker.
  2. Add black beans, corn, salsa, cumin, chili powder, and garlic powder to the slow cooker.
  3. Stir to combine, making sure chicken is covered.
  4. Cook on low for 6-8 hours or until chicken is cooked through and shreds easily.
  5. Shred the chicken with two forks and mix back into the sauce.
  6. Serve over cooked rice and top with cheese and cilantro.

Notes

  • For extra flavor, marinate the chicken overnight.
  • Serve with avocado or sour cream on top.
