- 2 pounds boneless, skinless chicken breasts
- 1 can black beans, drained and rinsed
- 1 can corn, drained
- 1 jar salsa
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1/2 teaspoon garlic powder
- 2 cups cooked rice
- 1 cup shredded cheese
- 1/4 cup chopped fresh cilantro
- Place chicken breasts in the slow cooker.
- Add black beans, corn, salsa, cumin, chili powder, and garlic powder to the slow cooker.
- Stir to combine, making sure chicken is covered.
- Cook on low for 6-8 hours or until chicken is cooked through and shreds easily.
- Shred the chicken with two forks and mix back into the sauce.
- Serve over cooked rice and top with cheese and cilantro.
