Ingredients

  • 2 pounds boneless, skinless chicken breasts
  • 1 cup black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 cup salsa
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 4 cups cooked rice or quinoa for serving
  • 1 cup shredded cheese for topping
  • 1/4 cup fresh cilantro, chopped for garnish

Instructions

  1. Place the chicken breasts in the slow cooker.
  2. Add black beans, corn, salsa, cumin, chili powder, garlic powder, onion powder, salt, and pepper to the slow cooker.
  3. Stir to combine all the ingredients.
  4. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  5. Once cooked, shred the chicken with two forks and stir everything together.
  6. Serve over cooked rice or quinoa and top with shredded cheese and cilantro.

Notes

  • For extra flavor, add lime juice when serving.
  • This recipe can easily be doubled for larger families or meal prep.
