- 2 pounds boneless, skinless chicken breasts
- 1 cup black beans, drained and rinsed
- 1 cup corn, frozen or canned
- 1 cup salsa
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- 4 cups cooked rice or quinoa for serving
- 1 cup shredded cheese for topping
- 1/4 cup fresh cilantro, chopped for garnish
- Place the chicken breasts in the slow cooker.
- Add black beans, corn, salsa, cumin, chili powder, garlic powder, onion powder, salt, and pepper to the slow cooker.
- Stir to combine all the ingredients.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours.
- Once cooked, shred the chicken with two forks and stir everything together.
- Serve over cooked rice or quinoa and top with shredded cheese and cilantro.

- For extra flavor, add lime juice when serving.
