  • 1 cup graham cracker crumbs
  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup mini marshmallows
  • 1 cup chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine graham cracker crumbs, flour, cocoa powder, baking soda, and salt.
  3. In a separate bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  4. Beat in the egg and vanilla extract into the butter mixture.
  5. Gradually mix in the dry ingredients until just combined.
  6. Fold in the mini marshmallows and chocolate chips.
  7. Drop tablespoon-sized portions of the cookie dough onto the prepared baking sheet, spacing them about 2 inches apart.
  8. Bake for 10-12 minutes or until the edges are set.
  9. Let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

  • For an extra gooey texture, add more mini marshmallows before baking.
  • You can substitute half of the chocolate chips with milk chocolate for a sweeter taste.
