- 4 large onions, thinly sliced
- 1 tablespoon olive oil
- 2 tablespoons butter
- 4 cups beef broth
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 bay leaves
- 1 teaspoon thyme
- 1 cup grated Gruyère cheese
- 4 slices turkey bacon, cooked and crumbled
- 4 slices of crusty bread
- In a large pot, heat olive oil and butter over medium heat. Add sliced onions and sauté until caramelized, about 25 minutes.
- Stir in the beef broth, salt, pepper, bay leaves, and thyme. Bring to a boil, then reduce to a simmer for 15 minutes.
- Preheat the broiler. Remove bay leaves, then ladle soup into oven-safe bowls.
