A delicious and healthy recipe for Spanish rice and beans with a twist of turkey bacon.

Ingredients

  • 1 cup long-grain white rice
  • 2 cups vegetable broth
  • 1 can (15 oz) black beans, drained and rinsed
  • 4 slices turkey bacon, chopped
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1/4 cup fresh cilantro, chopped

Instructions

  1. In a large pot, cook the turkey bacon over medium heat until crispy. Remove and set aside.
  2. In the same pot, sauté the onion and garlic until translucent.
  3. Add the rice, vegetable broth, black beans, cumin, and paprika. Bring to a boil.
  4. Reduce heat to low, cover, and simmer for 20 minutes or until rice is cooked.
  5. Stir in the cooked turkey bacon and cilantro before serving.

Notes

  • For extra flavor, add a squeeze of lime before serving.
  • You can substitute brown rice for a healthier option, but adjust cooking time accordingly.
