  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 1 tablespoon curry powder
  • 1 teaspoon cayenne pepper
  • 1 can (14 oz) diced tomatoes
  • 2 cups vegetable broth
  • 1 cup peanut butter
  • 2 cups sweet potatoes, cubed
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 2 cups spinach
  • 1 tablespoon lime juice

Instructions

  1. Turn on the Instant Pot and select the sauté function.
  2. Add the olive oil, onions, garlic, and ginger. Sauté until softened.
  3. Stir in the curry powder and cayenne pepper.
  4. Add the diced tomatoes, vegetable broth, and peanut butter. Mix well.
  5. Add the sweet potatoes and chickpeas. Stir to combine.
  6. Seal the Instant Pot lid and cook on high pressure for 12 minutes.
  7. Once the cooking time is complete, quick release the steam.
  8. Stir in the spinach and lime juice before serving.
