- 1 tablespoon olive oil
- 1 onion, diced
- 3 cloves garlic, minced
- 1 tablespoon ginger, grated
- 1 tablespoon curry powder
- 1 teaspoon cayenne pepper
- 1 can (14 oz) diced tomatoes
- 2 cups vegetable broth
- 1 cup peanut butter
- 2 cups sweet potatoes, cubed
- 1 can (15 oz) chickpeas, drained and rinsed
- 2 cups spinach
- 1 tablespoon lime juice
- Turn on the Instant Pot and select the sauté function.
- Add the olive oil, onions, garlic, and ginger. Sauté until softened.
- Stir in the curry powder and cayenne pepper.
- Add the diced tomatoes, vegetable broth, and peanut butter. Mix well.
- Add the sweet potatoes and chickpeas. Stir to combine.
- Seal the Instant Pot lid and cook on high pressure for 12 minutes.
- Once the cooking time is complete, quick release the steam.
- Stir in the spinach and lime juice before serving.
