  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • 2 tablespoons red curry paste
  • 1 can (14 oz) diced tomatoes
  • 4 cups vegetable broth
  • 1 cup peanut butter
  • 1 can (15 oz) chickpeas, drained
  • 2 cups sweet potatoes, cubed
  • 1 cup spinach, chopped
  • 1 tablespoon lime juice

Instructions

  1. Set the Instant Pot to ‘Sauté’ mode and add olive oil.
  2. Add onions, garlic, and ginger, cooking until softened.
  3. Stir in the red curry paste and cook for another minute.
  4. Add the diced tomatoes and vegetable broth, followed by peanut butter.
  5. Mix in chickpeas and sweet potatoes.
  6. Seal the Instant Pot and set to ‘Manual’ for 15 minutes.
  7. Release the pressure naturally, then stir in spinach and lime juice.
