  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 2 tablespoons red curry paste
  • 4 cups vegetable broth
  • 1 can coconut milk
  • 1 cup dumplings (frozen or homemade)
  • 1 cup mushrooms, sliced
  • 2 cups spinach
  • 2 tablespoons soy sauce
  • 1 tablespoon lime juice
  • 2 green onions, chopped
  • Fresh cilantro for garnish

Instructions

  1. Heat the vegetable oil in a large pot over medium heat.
  2. Add the diced onion and sauté until translucent.
  3. Add the garlic and ginger, cooking for another minute until fragrant.
  4. Stir in the red curry paste and cook for 1-2 minutes.
  5. Pour in the vegetable broth and bring to a simmer.
  6. Add the coconut milk and stir to combine.
  7. Incorporate the dumplings and mushrooms, cooking until the dumplings are heated through.
  8. Add the spinach, soy sauce, and lime juice, stir well, and remove from heat.
  9. Serve hot, garnished with green onions and cilantro.
