Ingredients

  • 1 pound chicken breast, sliced
  • 2 cups coconut milk
  • 3 tablespoons red curry paste
  • 2 cups mixed vegetables (bell peppers, carrots, snap peas)
  • 2 tablespoons fish sauce
  • 1 tablespoon brown sugar
  • 1 tablespoon lime juice
  • 1 tablespoon vegetable oil
  • 2 cups jasmine rice
  • 1 cup fresh basil leaves

Instructions

  1. Heat the vegetable oil in a large pan over medium heat.
  2. Add the sliced chicken and cook until browned.
  3. Stir in the red curry paste and cook for 2 minutes.
  4. Pour in the coconut milk and bring to a simmer.
  5. Add the mixed vegetables, fish sauce, brown sugar, and lime juice.
  6. Simmer for about 10 minutes or until the vegetables are tender.
  7. Serve hot over cooked jasmine rice and garnish with fresh basil leaves.
