Ingredients

  • 2 heads garlic
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 2 bay leaves
  • Salt to taste
  • Fresh ground pepper to taste
  • Chives for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Cut the tops off the garlic heads, drizzle with olive oil, and wrap in foil. Roast in the oven for about 30-35 minutes, until soft.
  3. In a large pot, heat olive oil over medium heat and sauté the onion until translucent.
  4. Add the roasted garlic (squeezed from the skins), vegetable broth, and bay leaves. Simmer for 20 minutes.
  5. Remove the bay leaves and blend the soup until smooth. Stir in the heavy cream and heat through.
  6. Season with salt and pepper. Serve garnished with chives.
