  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 4 garlic cloves, minced
  • 6 cups beef broth
  • 1 can diced tomatoes (14.5 ounces)
  • 1 cup green beans, trimmed
  • 1 teaspoon dried thyme
  • 2 bay leaves
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery, sautéing until softened.
  2. Add garlic and cook until fragrant.
  3. Add the beef stew meat and brown on all sides.
  4. Pour in the beef broth and bring to a boil.
  5. Add diced tomatoes, green beans, thyme, bay leaves, salt, and pepper.
  6. Reduce heat and simmer for 1.5 to 2 hours, or until the beef is tender.
  7. Remove bay leaves before serving.
