Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 6 cups vegetable broth
  • 1 cup orzo pasta
  • 1 can (15 oz) diced tomatoes
  • 2 cups fresh spinach
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add onion, carrots, and celery. Sauté until softened.
  3. Stir in garlic, thyme, and oregano; cook for another minute.
  4. Pour in vegetable broth and bring to a boil.
  5. Add orzo and tomatoes; reduce heat and simmer for 10 minutes.
  6. Fold in fresh spinach, and season with salt and pepper.
  7. Serve hot, garnished with fresh herbs if desired.
