A deliciously easy White Chicken Chili with a twist of turkey bacon that will warm your heart and soul.

Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 4 slices turkey bacon
  • 1 can white beans
  • 1 cup chicken broth
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 cup corn, frozen or canned
  • 1 lime, juiced
  • 1/4 cup cilantro, chopped

Instructions

  1. In a large pot, cook the turkey bacon until crispy. Remove and set aside.
  2. In the same pot, add the chopped onion and minced garlic, sauté until translucent.
  3. Add the chicken breast and cook until no longer pink.
  4. Shred the chicken and stir in the white beans, chicken broth, corn, spices, and lime juice.
  5. Simmer for 20 minutes to let flavors combine.
  6. Top with crumbled turkey bacon and cilantro before serving.

Notes

  • This chili can be easily frozen for later use.
