  • 1 tablespoon olive oil
  • 1 pound cooked chicken, shredded
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 2 cups heavy cream
  • 1 can (15 ounces) ricotta cheese
  • 2 cups lasagna noodles, broken
  • 1 cup shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 2 teaspoons Italian seasoning
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add the onion and garlic, and sauté until fragrant.
  3. Stir in the shredded chicken and cook for a few minutes.
  4. Add chicken broth and bring to a boil.
  5. Reduce heat, add heavy cream, ricotta cheese, and Italian seasoning.
  6. Add broken lasagna noodles and cook until noodles are tender.
  7. Stir in mozzarella and Parmesan cheese until melted and creamy.
  8. Season with salt and pepper, then serve hot.
