6 ounces turkey bacon
1 tablespoon olive oil
1 onion, chopped
2 cloves garlic, minced
4 cups chicken broth
1 cup heavy cream
8 ounces lasagna noodles, broken
1 cup ricotta cheese
1 cup shredded mozzarella cheese
½ cup grated Parmesan cheese
2 cups spinach, chopped
1 teaspoon Italian seasoning
Instructions
In a large pot, cook the turkey bacon until crispy. Remove and chop.
In the same pot, heat olive oil and sauté onions and garlic until fragrant.
Add chicken broth and bring to a boil.
Stir in the heavy cream and broken lasagna noodles. Cook until noodles are al dente.
Mix in ricotta, mozzarella, Parmesan, spinach, and chopped turkey bacon. Season with Italian seasoning. Cook until cheese is melted and spinach is wilted.
Serve hot, garnished with additional cheese if desired.
Notes
For a lighter version, substitute half-and-half for the heavy cream.
