  • 1/2 cup cocoa powder
  • 1 cup flour
  • 3/4 cup sugar
  • 1/2 cup vegetable oil
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix the grated zucchini, sugar, and vegetable oil.
  3. Add the eggs and vanilla extract, then stir until combined.
  4. In a separate bowl, whisk together the dry ingredients: cocoa powder, flour, baking powder, baking soda, and salt.
  5. Gradually add the dry mixture to the wet mixture, stirring until just combined.
  6. Pour the batter into a greased baking pan.
  7. Bake for 25-30 minutes or until a toothpick comes out clean.
  8. Let cool before slicing into squares.

Notes

  • For a richer taste, add chocolate chips to the batter.
  • Be sure to squeeze out excess moisture from the zucchini before adding it to the mix.
