  • 1 cup granulated sugar
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×9 inch baking dish.
  2. In a large bowl, mix together the grated zucchini, sugar, cocoa powder, flour, baking soda, and salt.
  3. Add the vegetable oil, eggs, and vanilla extract, mixing until well combined.
  4. Fold in the chocolate chips.
  5. Pour the batter into the prepared baking dish and spread evenly.
  6. Bake for 25-30 minutes or until a toothpick inserted comes out clean.
  7. Allow to cool before cutting into squares.

Notes

  • For extra richness, consider adding walnuts or swapping half of the all-purpose flour with almond flour.
