1 cup grated zucchini
1 cup all-purpose flour
1/2 cup unsweetened cocoa powder
1 cup granulated sugar
1/2 cup vegetable oil
2 large eggs
1 teaspoon vanilla extract
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup chocolate chips
Instructions
Preheat the oven to 350°F (175°C).
In a large bowl, mix the grated zucchini, sugar, and oil.
Add the eggs and vanilla extract, and whisk until combined.
In another bowl, whisk together the flour, cocoa powder, baking soda, and salt.
Gradually add the dry ingredients to the wet mixture, stirring until just combined.
Fold in the chocolate chips.
Pour the batter into a greased 9×9 inch baking pan.
Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
Let cool before cutting into squares.
Notes
For a healthier version, you can substitute half of the granulated sugar with applesauce.
These brownies can also be chilled and served cold for a different texture.
