A delicious and simple recipe for Zucchini Parmesan that makes for a perfect quick weeknight dinner.

  • 4 medium zucchinis
  • 2 cups marinara sauce
  • 1 cup breadcrumbs
  • 1 cup shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt to taste
  • Pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Slice the zucchinis into thin rounds.
  3. In a large skillet, heat olive oil over medium heat and sauté the zucchinis until tender.
  4. Spread a layer of marinara sauce in a baking dish.
  5. Layer half of the sautéed zucchinis over the sauce, followed by half of the breadcrumbs, half of the mozzarella, and half of the Parmesan.
  6. Repeat the layers with the remaining ingredients.
  7. Sprinkle garlic powder, Italian seasoning, salt, and pepper on top.
  8. Bake in the oven for 25-30 minutes until the cheese is bubbly and golden.

Notes
