A delicious and hearty soup featuring turkey bacon and chicken ham that adds a unique twist to the classic Zuppa Toscana.

Ingredients

  • 6 strips turkey bacon
  • 1 cup chicken ham
  • 4 cups chicken broth
  • 2 cups kale, chopped
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 3 medium potatoes, diced
  • 1 cup heavy cream
  • 2 teaspoons Italian seasoning
  • Salt to taste
  • Pepper to taste

Instructions

  1. In a large pot, cook the turkey bacon until crispy, then remove and chop.
  2. In the same pot, sauté onions until translucent, then add garlic and cook for another minute.
  3. Add diced potatoes and chicken broth, bring to a boil, then reduce heat and simmer until potatoes are tender.
  4. Stir in chopped kale, heavy cream, Italian seasoning, and the chopped bacon. Season with salt and pepper.
  5. Simmer for an additional 5 minutes, then serve hot.

Notes

  • For a spicier version, add red pepper flakes.
  • This soup can be made ahead and stored in the refrigerator for up to 3 days.
