  • 2 medium zucchini
  • 2 medium bell peppers
  • 1 medium onion
  • 3 cloves garlic
  • 4 medium tomatoes
  • 1 tablespoon olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Dice the eggplant, zucchini, bell peppers, onion, and tomatoes.
