Ingredients

  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, browned

  • 1 teaspoon vanilla extract
  • 1 cup shredded zucchini
  • 1 1/2 cups rolled oats
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, cream together the brown sugar, granulated sugar, and browned butter.
  3. Add the egg and vanilla extract, and mix until well combined.
  4. Stir in the shredded zucchini.
