Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 cup milk
  • 2 cups peeled and diced apples
  • 1/2 cup brown sugar
  • 1/4 cup rolled oats
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, mix flour, sugar, baking powder, salt, and cinnamon together.
  3. In another bowl, whisk together melted butter, eggs, milk, and vanilla extract.
  4. Combine the wet ingredients with the dry ingredients until just mixed.
  5. Gently fold in the diced apples.
  6. In a small bowl, mix brown sugar, oats, and a teaspoon of cinnamon for the streusel topping.
  7. Fill each muffin cup with the batter and sprinkle the streusel topping on top.
  8. Bake for 20-25 minutes or until a toothpick comes out clean.
  9. Allow to cool on a wire rack before serving.
