- 4 salmon fillets
- 1 tablespoon olive oil
- 2 cups cherry tomatoes, halved
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1 cup fresh basil, chopped
- Salt to taste
- Black pepper to taste
- Heat olive oil in a large skillet over medium heat.
- Season salmon fillets with salt and pepper, then add to the skillet.
- Cook for about 5 minutes on each side, until salmon is cooked through. Remove and set aside.
- In the same skillet, add garlic and cherry tomatoes, cooking until tomatoes are softened.
- Pour in the heavy cream and bring to a simmer.
- Stir in Parmesan cheese until melted and smooth.
- Add the chopped basil and return the salmon to the skillet.
- Cook for an additional 2 minutes, allowing flavors to meld.
- Serve warm over pasta or with crusty bread.
