Creamy Tuscan Salmon with Tomatoes & Basil

A delicious and creamy salmon dish with fresh tomatoes and basil, perfect for any occasion.

Ingredients

  • 4 salmon fillets
  • 1 tablespoon olive oil
  • 2 cups cherry tomatoes, halved
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 cup fresh basil, chopped
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Season salmon fillets with salt and pepper, then add to the skillet.
  3. Cook for about 5 minutes on each side, until salmon is cooked through. Remove and set aside.
  4. In the same skillet, add garlic and cherry tomatoes, cooking until tomatoes are softened.
  5. Pour in the heavy cream and bring to a simmer.
  6. Stir in Parmesan cheese until melted and smooth.
  7. Add the chopped basil and return the salmon to the skillet.
  8. Cook for an additional 2 minutes, allowing flavors to meld.
  9. Serve warm over pasta or with crusty bread.

Notes

  • For extra flavor, add a squeeze of lemon juice before serving.
  • Serve with a side of steamed vegetables.
