  • 3 eggs, beaten
  • 2 cups breadcrumbs
  • 4 cups marinara sauce
  • 2 cups shredded mozzarella cheese

  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 tablespoon Italian seasoning

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Slice the eggplants and sprinkle with salt. Let sit to draw out moisture.
  3. Set up a breading station with flour, beaten eggs, and breadcrumbs.
