A rich and flavorful Guinness Beef Stew that combines tender beef with the smoky taste of turkey bacon, perfect for a comforting meal.

Ingredients

  • 2 pounds beef chuck, cut into cubes
  • 4 slices turkey bacon, chopped
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 1 can (14.9 oz) Guinness beer
  • 4 carrots, sliced
  • 3 potatoes, diced
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. In a large pot, cook the chopped turkey bacon over medium heat until crispy.
  2. Add the diced onion and minced garlic, sautéing until the onion is translucent.
  3. Add the beef cubes to the pot, browning on all sides.
  4. Stir in the tomato paste, then pour in the Guinness beer and beef broth.
  5. Add the carrots, potatoes, thyme, salt, and pepper.
  6. Bring to a boil, then reduce heat and let simmer for about 2 hours, or until the beef is tender.
