Ingredients
4 slices turkey bacon
1 cup chopped onion
2 cups sliced mushrooms
3 cloves garlic, minced
4 cups vegetable broth
1 teaspoon dried thyme
1 tablespoon soy sauce
1 cup heavy cream
2 tablespoons flour
1 tablespoon fresh lemon juice
Salt to taste
Black pepper to taste
Instructions
In a large pot, cook the turkey bacon over medium heat until crispy. Remove and crumble. Leave the drippings in the pot.
Add the onions and cook until translucent.
Stir in the mushrooms and garlic, cooking until the mushrooms are tender.
Sprinkle the flour over the mixture and stir, cooking for another minute.
Slowly add the vegetable broth while stirring to prevent lumps.
Add the thyme, soy sauce, and crumbled bacon back to the pot. Simmer for about 15 minutes.
Stir in the cream and lemon juice. Season with salt and pepper to taste. Cook until heated through.
Notes
This soup is great served with crusty bread.
Feel free to adjust the thickness by adding more or less cream.
