These Incredible Gingerbread Oatmeal Cream Pies are the perfect festive treat, combining rich gingerbread flavors with creamy filling.

Ingredients

  • 1 cup all-purpose flour
  • 1 teaspoon baking soda
  • 2 teaspoons ground ginger
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon salt
  • 1 cup brown sugar
  • 1/2 cup unsalted butter, softened
  • 1 large egg
  • 1/4 cup molasses
  • 2 cups old-fashioned oats
  • 1 batch of cream filling

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix together flour, baking soda, spices, and salt.
  3. In a separate bowl, cream together butter and brown sugar until light and fluffy.
  4. Add in the egg and molasses and mix well.
  5. Gradually incorporate the dry ingredients into the wet ingredients.
  6. Fold in the oats.
  7. Drop tablespoon-sized balls of dough onto a baking sheet.
  8. Bake for 10-12 minutes or until lightly browned.
  9. Allow to cool completely before filling with cream.
