Ingredients
4 salmon fillets
2 tablespoons olive oil
4 cloves garlic, minced
1 cup heavy cream
1/2 cup sun-dried tomatoes, chopped
1 cup spinach, fresh
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 cup fresh basil, chopped
Instructions
Heat olive oil in a large skillet over medium heat. Add salmon fillets and cook until golden and cooked through, about 4-5 minutes per side. Remove from skillet and set aside.
Add minced garlic to the same skillet and sauté for 1 minute.
Pour in the heavy cream and bring to a simmer.
Add sun-dried tomatoes and spinach, cooking until spinach wilts.
Return salmon to the skillet, spooning the sauce over the top.
Season with salt, pepper, and fresh basil before serving.
