Ingredients

  • 2 cups cooked quinoa
  • 1 pound chicken breast, diced
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup fresh dill, chopped
  • 1 lemon, juiced
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/4 cup feta cheese, crumbled

Instructions

  1. In a large bowl, combine cooked quinoa, diced chicken, olive oil, salt, and black pepper.
  2. Add chopped dill and lemon juice, and mix until well combined.
  3. Fold in cherry tomatoes and cucumber.
