A delightful twist on traditional Mexican street corn salad featuring turkey bacon.

Ingredients

  • 4 cups corn kernels
  • 6 slices turkey bacon
  • 1 cup diced red bell pepper
  • 1/2 cup chopped red onion
  • 1 cup crumbled feta cheese
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup mayonnaise
  • 2 tablespoons lime juice
  • 1 teaspoon chili powder
  • Salt and pepper to taste

Instructions

  1. Cook the turkey bacon in a skillet until crispy, then chop it into bite-sized pieces.
  2. In a large bowl, combine corn, red bell pepper, red onion, and cilantro.
  3. Add the crumbled feta cheese and chopped turkey bacon to the mixture.
  4. In a separate small bowl, whisk together mayonnaise, lime juice, chili powder, salt, and pepper.
  5. Pour the dressing over the corn mixture and toss until well combined.
  6. Serve immediately or chill before serving.

Notes

  • This salad is best served fresh but can be stored in the refrigerator for a couple of days.
