Mini cheesecakes topped with fresh berries are perfect for any occasion, bringing joy and sweetness to your table.

Ingredients

  • 1 cup graham cracker crumbs
  • 1/4 cup sugar
  • 1/2 cup melted butter
  • 16 ounces cream cheese
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 2 cups mixed berries (strawberries, blueberries, raspberries)
  • 1/4 cup fruit preserves (optional)

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a bowl, combine graham cracker crumbs, sugar, and melted butter.
  3. Press the mixture firmly into the bottom of muffin tins to form the crust.
  4. In another bowl, beat the cream cheese, powdered sugar, and vanilla until smooth.
  5. Add eggs one at a time, mixing well after each addition.
  6. Pour the cream cheese mixture over the crust in muffin tins.
  7. Bake for about 20 minutes or until set.
  8. Let them cool completely before topping with berries and fruit preserves if desired.

Notes

  • For a more decadent treat, add chocolate chips to the cream cheese mixture.
  • These mini cheesecakes can be made a day in advance for convenience.
