A delightful no bake mint chocolate chip shamrock cheesecake that is perfect for any occasion.

Ingredients

  • 1 package chocolate cookies
  • 1/2 cup unsalted butter, melted
  • 2 packages cream cheese, softened
  • 1 cup powdered sugar
  • 1 cup heavy whipping cream
  • 1 teaspoon peppermint extract
  • 1 cup mini chocolate chips
  • green food coloring to desired color

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, combine crushed chocolate cookies and melted butter. Press mixture into the bottom of a springform pan.
  3. In a large bowl, beat the softened cream cheese and powdered sugar until smooth. Add heavy whipping cream and peppermint extract, mix until fluffy.
  4. Fold in mini chocolate chips and green food coloring.
  5. Spread the cream cheese mixture over the crust in the springform pan. Chill in the refrigerator for at least 4 hours or until set.
  6. Serve chilled and enjoy!
