Ingredients

  • 1 cup all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon ginger
  • 1/4 teaspoon salt
  • 1 cup pumpkin puree
  • 1 cup Greek yogurt
  • 2 large eggs
  • 2 tablespoons maple syrup
  • 1 teaspoon vanilla extract

Instructions

  1. In a large bowl, whisk together the flour, baking powder, cinnamon, nutmeg, ginger, and salt.
  2. In another bowl, mix the pumpkin puree, Greek yogurt, eggs, maple syrup, and vanilla extract until combined.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined.
  4. Heat a non-stick skillet over medium heat and pour 1/4 cup of batter for each pancake.
  5. Cook until bubbles form on the surface, then flip and cook until golden brown on the other side.
  6. Serve warm, topped with additional Greek yogurt and a drizzle of maple syrup.

Notes

  • For a vegan version, substitute Greek yogurt with a plant-based yogurt.
