Ingredients

  • 2 pounds boneless, skinless chicken thighs
  • 1 cup black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup salsa
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 cups cooked rice or cauliflower rice
  • 1 cup shredded cheese, optional

Instructions

  1. Place the chicken thighs in the slow cooker.
  2. Top with black beans, corn, onion, garlic, salsa, cumin, chili powder, salt, and pepper.
  3. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  4. Shred the chicken before serving and mix well with the other ingredients.
  5. Serve over cooked rice or cauliflower rice, and top with shredded cheese if desired.

Notes

  • For a spicier dish, add diced jalapeños.
