- 2 pounds boneless, skinless chicken thighs
- 1 cup black beans, drained and rinsed
- 1 cup corn, frozen or canned
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 cup salsa
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 4 cups cooked rice or cauliflower rice
- 1 cup shredded cheese, optional
- Place the chicken thighs in the slow cooker.
- Top with black beans, corn, onion, garlic, salsa, cumin, chili powder, salt, and pepper.
- Cover and cook on low for 6-8 hours or high for 3-4 hours.
- Shred the chicken before serving and mix well with the other ingredients.
- Serve over cooked rice or cauliflower rice, and top with shredded cheese if desired.
