Slow Cooker Creamy Beef Stroganoff

A rich and creamy beef stroganoff made easy in your slow cooker, with the added delight of turkey bacon.

Ingredients

  • 1 pound beef stew meat
  • 4 slices turkey bacon
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 2 teaspoons Dijon mustard
  • 8 ounces mushrooms, sliced
  • 1 cup sour cream
  • 2 tablespoons all-purpose flour
  • Salt to taste
  • Pepper to taste

Instructions

  1. In a large skillet, cook the turkey bacon until crispy. Remove and chop.
  2. In the remaining bacon fat, brown the beef stew meat on all sides.
  3. Add the onions and garlic to the skillet and sauté until translucent.
  4. Transfer the beef, bacon, onions, and garlic to the slow cooker.
  5. Add beef broth, Worcestershire sauce, Dijon mustard, and mushrooms to the slow cooker.
  6. Cook on low for 6-8 hours or until the meat is tender.
  7. In a small bowl, mix sour cream and flour. Stir into the slow cooker.
  8. Cook for an additional 30 minutes, then season with salt and pepper.
  9. Serve over egg noodles or rice.

Notes

  • For a thicker sauce, add more flour.
  • Leftovers can be refrigerated for up to 3 days.
