Ingredients

  • 2 cups sushi rice
  • 4 cups water
  • 1 lb salmon fillet
  • 1/4 cup mayonnaise
  • 2 tablespoons sriracha
  • 1 tablespoon soy sauce
  • 2 green onions, chopped
  • 1 sheet nori, cut into strips
  • 1 tablespoon sesame seeds

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Rinse the sushi rice under cold water until the water runs clear.
  3. In a saucepan, combine the rinsed rice and water. Bring to a boil, then reduce to a simmer, cover, and cook for 18 minutes.
  4. While the rice cooks, prepare the salmon. In a bowl, mix mayonnaise, sriracha, and soy sauce. Flake the salmon and mix it with the spicy mayonnaise.
  5. Once the rice is cooked, spread it in a baking dish. Layer the salmon mixture on top.
  6. Sprinkle chopped green onions and sesame seeds over the top.
  7. Bake in the preheated oven for 15-20 minutes until heated through.
  8. Serve with nori strips on the side.

  • For extra flavor, marinate the salmon in soy sauce before baking.
