A hearty and comforting dish, Texas Cowboy Stew combines turkey bacon and chicken ham for a flavorful experience.

Ingredients

  • 4 slices turkey bacon
  • 1 pound chicken ham, diced
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 2 cups mixed vegetables (carrots, corn, peas)
  • 4 cups chicken broth
  • 1 can diced tomatoes
  • 2 teaspoons chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. In a large pot, cook the turkey bacon until crispy. Remove and set aside.
  2. In the same pot, add diced chicken ham and cook until browned.
  3. Add onion and garlic, sautéing until translucent.
  4. Mix in the mixed vegetables and cook for a few minutes.
  5. Pour in the chicken broth and diced tomatoes, bringing the mixture to a simmer.
  6. Stir in chili powder, cumin, salt, and pepper.
  7. Let it simmer for 30 minutes to allow flavors to meld.
  8. Serve hot, garnished with crispy turkey bacon on top.
